Current sensitivity setting - is very sensitive to low for Stunt?

Having toasted a motor on a nose over I looked at my ESC current cut-off setting and I have been using Normal. My reason was I thought that if I went to a sensitive and had a minor grass prop buzz on takeoff it might kick off. Since the normal setting proved to be to high to save the motor on the nose over I have move to sensitive setting and been flying the ship with no problem. Question is can I go to very sensitive setting and will that still have enough head room in current spike for hard maneuvers we fly in stunt without cutting out the motor on high amps?
