The only person I personally know who has flown a Stalker .76 is Norm Whittle from Utah. I believe John Leidle has one, but don't know if he's flown it. Also recall seeing some contest reports from Japan that showed Kaz Minato as flying a Stalker .76, and I know he sells the Stalker lineup. Steven Yampolsky also has a couple of Stalker .76's, but again, I don't know if he's flown them.
I launched some practice and official flights for Norm Whittle at a NW CL Regionals, and liked the sound of the engine. Norm told me that he used ~4 oz of 80-20, and a 3-blade CF prop that he got from Gordan Delaney after a prop strike. I'd guess that this was from Gordan's first (huge!) original Tony, which has had Stalker .81, Saito .72 and Saito .81 power. I think it would be about 12.5" x 6" and likely a Bolly or Brian Eather prop. Norm's airplane (Sultan) was roughly the size of an SV-11, so your ARF SV-11 should be ok.
Norm sent me an email or PM to the effect that he would start with a 13-6 wood (I'd go with Xoar). The British Columbia Propeller Company Ltd. now is selling a big IC prop intended for PA .75's...but I think it would work well on the Stalker if pitched up to 5"- 6" and perhaps clipped a bit. I don't know what the stock diameter is. You might contact Alan Resinger, because he also knows Stalkers, having flown them for some years, and importing some into the PNW for others, like me.
Norm also said that he had an engine run problems after he returned to Utah, and solved it by boring the venturi out to .330". Yes, .330"!!! Well...I am a believer that some engines really benefit from increasing the fuel consumption, whether that is done by adding nitro or increasing the venturi size is up to you. I'd prefer to use a wee bit of nitro.
Since Norm used 4 oz of 80-20 and then increased the venturi size quite a bit, a 4 oz tank might not hold enough with the bigger venturi or some nitro, so I'd use a 6 oz clunk tank plumbed with a rigid uniflow. I would not use muffler pressure, but would plumb the uniflow inlet tube into the backplate cavity to stop upwind/downwind rich/lean nonsense. Be sure you provide good support for the muffler...I recall there being an odd cylindrical bump cast into the aft end of the muffler...that's what it's for! Yes, I have a Stalker .76, but no, haven't run it yet. Too many cool engines, I suppose!
