I have the wing ready to install in the fuse and am considering 1/2 oz. glass & epoxy on the center section.  Is there any reason not to do this, other than the additional weight?

1/2 oz glass adds no strength. It simply gives a better surface for finishing. Carrier planes don't deal with lots of G forces like stunt or combat planes do, so it really isn't necessary to reinforce the center section (especially if the landing gear are mounted to the fuselage). The weight penalty isn't much; the biggest penalty is simply the extra effort required.
