Take apart mechanism

So, where does one acquire a take apart mechanism like the one in the picture below?

Man, that's pretty.  It looks a whole lot like something that was machined out of billet then sand blasted.  Are you sure it's not custom?

The only argument I have with it is that you're depending on the shear strength of the screws to hold your wings on -- and screws generally want to be loaded in tension, not shear.  But hey -- if it works, who am I to argue?

Actually the strength of fasteners is relative to both their material and size.
So you can use them for both shear and tension. But how much shear will depend on their size and material.
In 1987 I worked for a company that used case hardened hilocs to attach the nacelle to the wing joint on the naceels mai longeron......didn't understand that device with the dial on it when they worked out the plans....
