I'm going to try using my wife's vinyl cutter to make some stencils/masking.  My question is what do you use. I'm not sure the best material for this application. Something removable of course. Any advice would be awesome.

I have used both mask and vinyl I prefer the vinyl as it gives me cleaner mask edges. If you vinyl is to sticky just stick it on your arm a few times least it works for me there are other methods to make it less sticky.

You can use removable vinyl but what I have been cutting for my friend is removable shelving liner.

I also use it to cut monokote trim.

I use 1/4" x 36 yds vinyl that comes in a roll for taping off my lines. Gives very clean edges. To remove the vinyl I use a heat gun from from about a foot away and it peels off real nice with no glue left and does not peel the paint off. . I learned that the hard way the first time I started removing it. I also have a Cricut to make a lot additions to my planes. I use Oracal 651 because its thinner than other brands. Here are a few of my planes that I have used my Cricut to make vinyl decals.
