C/A should be used fairly quick, but I've heard keeping it in the fridge helps it last longer. As far as dope I'd say as long as it's sealed so no air gets in it should be fine.

From what I have heard, CA in the fridge works well if the bottle is sealed. Since it is activated by moisture, the storage of open containers ie using it then putting in fridge when done building , would be counterproductive because of condensation  from the heating and cooling cycles

After a long layoff I'm finishing with some dope that I purchased when I was flying 20+ years ago. The gallon can it came in looked awful - well rusted, the dope itself was a little thick, but nothing that some thinner didn't resolve when I started building again. When I put it away there was maybe a half gallon in the tin and I've had no problems using it since starting to build and fly again.

Remember that what evaporates from dope is thinner...add some and you should be okay, unless it has the consistency of a brick....

Dope doesn't last long at my house.
CA stays a little longer.
