I'm new to lithium batteries and I could use some advice.
I have some 380mAh single cells (3.7 VDC).
Can they be wired up in parallel to yield 760 mAh?
If so, would they be charged separately or in parallel?
I want to use them in my spark ignition planes instead of three AAA alkaline batteries.

You most certainly can use them in parrallel.
In the past I've just used a Y lead to connect them in parrallel, and charged separately but you can parrallel charge them through the Y lead if you chose to.

How much current does your ignition system pull?
How much on average, how much with the points closed?
AAA batteries are not good current sources, I suspect that a single cell should deliver plenty of current for a 6-minute flight, and it'll weigh half as much as two cells in parallel.
