No real problem.  I lay a big rag on the outside wingtip to hold it down.  It get shed when the airplane takes off.   Another possibility is to put a piece of 2 x 4 under the inside wing to hold it up.

I have done a lot of one wheeled stooge flying.  Most of it on unkept soccer fields.  It works fine

Here are my tips
1) be ready to back up.
2) make sure airplane is pointed out.
3) paper towel roll under inboard wing.
4) Proper TO location of the wind, 3/4 down wind.
5) lines clear of all weeds!
6) Big wheels are better in the rough.
