  I put some fillets on a new model and they started to set up too quickly.
 What is the best way that you have found to sand them down, or remove them altogether?

  I am looking forward to finishing this model and need some insights/advice with this problem...

What is the material?

Heat works with resins and some chemicals work with other materials.

I know stripper will loosen SuperFil fillets. Paint it on there and the fillets will let go.

  Thanks guy's, I think that I might grind them down, and cover them with leather fillets.

Leather fillets saved the day for me on a 'wing root gone bad'. Bill Sawyer (RIP) sent me out some sets in assorted sizes, I had forgotten how handy these were in the 'old days'!
