Anyone know the difference between Lithium Polymer batts and Lithium Phosphate?

Perhaps you mean lithium iron nano phosphate? (LiFePO3)
Lower voltage and energy density than Lipo (Lithium Cobalt).
For a while they had higher power density(A123 cells), but then higher C Lipo became available.

Main advantage is greater number of charge/discharge cycles, and just about zero fire risk.
