Congrats Phil on your new engine.
I've always broke my Stalkers in on the same prop length I planned on using, but I would drop to a slightly lower pitch for the first few runs.
I'd suggest a 10 or 11 inch prop with a 5 pitch. The idea is to run the engine long enough, with out loading the engine too much. After a half dozen 2 minute runs, with a cooling period between runs, you can mount it up, and go to your running prop. The engine is still breaking in, so go easy for the first few flights. You do not want to go too lean too soon. I galled a rod on a .51 that way.
I use FAI fuel with ~18% oil, about 5% of that oil being castor these days.
You'll know when the engine is ready, as the runs will become dead reliable, and the fuel usage will stabilize, running the same amount of time with the same fuel load.
