Keith Sparks has a book called "Building with Foam" that's a good primer on using foam for construction of model airplanes.  Although it's about RC models, lots of good info for someone new to using foam for all components including wings.  Here's the link to his website.

Contact Bob Hunt, I think he might have a dvd on them.  He's quite a master craftsman with foam. (And other modeling pursuits as well.)
