What are people successfully using to protect their plans from modern adhesives these days?

Phil I use Parchment paper.  You can buy huge rolls at Sams or Costco.  I used wax paper for years until they did something to it and it is not as good anymore.

My building bench is level and covered with a piece of 1/4" thick glass.  I will often lay a piece of 1/2" sheetrock on top of the glass, tape or pin the plan to the sheetrock, lay a piece of parchment paper over the part of the plan I am going to build, usually a built up stab or elevator and glue it together.  The glue will not stick to the parchment paper and you can see through it.  I sometimes use Parchment paper in lieu of velum to trace or draw plans as it is considerably less expensive than velum.

Hang the plans on the wall and use jigs for construction.  It is more accurate and easier on the plans.

Visit Kinko's or FedEx make several copies and use one to sacrifice. Much easier than trying to build on a plan that's difficult to see.

Yes Mike, I too have not found any glue that will stick to Parchment paper.  Also tape will not stick to it.   Get Parchment paper in the baking section of your local grocery store.

Like steve says; get copies and work off them.

If you are making a sacrificial copy and want to build more than one on the plans use Glad Press and Seal as it is nearly transparent and nothing sticks to it.

HOWEVER the sticky stuff that seems pretty low tack at first will, after a few weeks, develop an inseparable bond with the paper making the plans unable to be saved long-term in clean condition.

I need to try parchment.  Not all are the same translucency, but I have not compared brands side-by-side.  I use it for *GASP* _baking_ on a fairly regular basis.  So much easier than greased and dusted pans.

I've used that Press and Seal for masking on a plane.  Learned to remove it as soon as possible.   It left a sticky surface that lucky for me alcohol cleaned it off.  Also as you said, I have a set of plans that the P&S is till stuck to.
